Kennedy Favorites- Feta Pepper Dip

Feta Pepper Dip

Here's a dip for your Super Bowl parties that is different from the same old Spinach and Artichoke dip.  This is really good with pita, potato chips, veggies, etc. but our favorite is with BBQ potato chips!!  Sounds weird, I know, but so delicious!  It makes a lot, so if you're making it only for your family, you might cut it in half...  Also, this is not spicy!  It is "pepper" as in pickled peppers :)

8 oz. Feta Cheese, crumbled
8 oz. Cream Cheese, softened
1/2 cup Mayonnaise or Plain Yogurt
1/2 cup Pickled Peppers (Peperoncini and/or Sweet Red Cherry Peppers), coarsely chopped
1/4 cup Scallions, chopped
1/2 tsp. Lemon Zest
Black Pepper to taste
Extra-Virgin Olive Oil
BBQ Chips, Pita, Veggies, etc.

Blend the feta, cream cheese and mayo in a food processor until smooth, scraping down the sides of the bowl.  Transfer to a bowl.
Fold in peppers, scallions, lemon zest and pepper.  Transfer to your serving dish and chill at least 1 hour.  Drizzle with olive oil and serve with chips, pita, veggies, etc.
