Barbecued Buffalo Chicken Pizza
Easy
Last week, Chris and I combined a few different recipes to come up with this delicious grilled pizza! We have done a similar one on the stove in our grill-pan, but it is nothing compared to that charcoal taste from an outdoor grill. We plan to make this again with guests, because it is sooo worth sharing!
1 lb. Chicken tenders
Salt & Pepper
1/2-1 cup Buffalo hot sauce (My family is big fans of Franks) plus more for garnish
1 T. Honey
Olive oil
1 Package of Pizza Dough (I just used the Pilsbury canned kind, but I know there are good places out there that sell their dough)
Blue Cheese Dressing or Ranch, whichever you prefer
2 Stalks Celery, diced
1/2 small Red Onion, sliced
2 Cups Shredded Mozzarella Cheese
Heat grill to medium. Toss the chicken in a bowl with the hot sauce (eyeball it to your preference) and the honey and sprinkle with salt and pepper. Grill chicken until cooked through. Remove from grill and chop into bite-sized pieces.
Cover a cookie sheet with foil and rub with olive oil. Roll out dough on a floured surface and cut into 2 pieces. Shape as desired and place onto the foil. Brush the tops of the dough with additional olive oil until well coated.
Place dough on grill and watch closely so as not to burn until bottom is cooked and a little charred, about 2-3 mins. Place back onto cookie sheet with raw side down.
Spread the cooked side of the dough with dressing and top with your vegetables, chopped chicken and cheese. Sprinkle a few dashes of the hot sauce across the top. Place back on grill, raw side down, with the lid covered until bottom is cooked and cheese is melted.
Enjoy!
